Peach Burrata Salad
with Golden Tomatoes
- 3 large ripe peaches, sliced
- 1 cup golden grape tomatoes, halved
- 1/2 cup chopped basil
- 5 ounces burrata cheese
- Extra virgin olive oil, for drizzling
- Sea salt and freshly ground pepper, to taste

Burrata is a creamy Italian cheese made from buffalo’s milk. You can find it at specialty cheese shops.
Place the burrata in the center of a plate and scatter the peach slices, tomaotoes, and basil over and all around. Drizzle with olive oil and season to taste with salt and pepper. Serve with crusty bread.
