Happy Monday! When the weather is this freezing – it's not breaking 30 degrees in NYC for the next four days – all I want to do is make a big pot of chili, invite some friends over, and watch a movie. (If I were a football fan, I'd say watch a game, but I'm not – so chili and movie, it is!)

Given that I'm already in the chili-making mode, I was thrilled when Muir Glen Organic asked me to develop a recipe for their Chili Roundup Sweepstakes. I developed the recipe below for White Bean Chicken Chili to highlight Muir Glen's delicious organic canned tomatoes (which happen to be sold in BPA-free cans - a huge bonus, in my opinion) and Simply Organic spices. The recipe is not only easy (it takes about 45 minutes start-to-finish), it's also the perfect affordable, make-in-advance meal, and gets even better after a day or two in the fridge.
