As much as I adore travel, there's really no place like home. It's nice to be sitting back at my computer, catching up on emails, with one of my cats curled up in my lap. Crazily enough, we came home to NYC temperatures that are way colder than anything we experienced in Iceland...go figure!

When the weather is this freezing, all I want to eat is soup. I could literally exist off soup and bread all winter long. There are so many great benefits to making a pot of soup: a) it feeds a crowd on the cheap b) it's a great way to pack a ton of veggies into one meal c) it's easy to make d) it's delicious e) the leftovers are even better reheated over the next couple of days. And it's so versatile: you could make a different soup every day of the week, and never run out of options! It's pretty much the perfect food. (Unfortunately, B doesn't share my enthusiasm for soup, so I am forced to cook other things every once in awhile!)

Anyway, I wanted to give you all a round-up of 8 of my favorite simple, healthy soup recipes to keep you cozy and warm during this winter.
