What to Cook This Week

Week of April 7, 2024

Hi friends! It's springtime (even if the weather is a bit colder than I'd like!), which means trees are in bloom and I'm craving fresh ingredients like spring peas and asparagus and salads.

I love this easy Pea & Pancetta Pasta - kid-friendly and simple enough to throw together on a weeknight. The Pea & Mint Pesto Crostini with Ricotta Crostini is the perfect appetizer for a springtime gathering, and I'm eating this Arugula & Farro Salad with Snap Peas and Watermelon Radishes on the regular right now. (Swap the farro for quinoa if you're GF.)

For a dinner party, this Shrimp with Saffron Rice & Fennel Salad would be perfect, followed by an Almond-Honey Cake for dessert, with fresh berries. Enjoy!

New Year Musings and a Word for 2022
